Focaccia
Focaccia is a traditional Italian flat bread, with added onions, olives, spices and other nutrients.
The recipe gives you a final weight of 0.750 kg, which is enough for 6 servings
Ingredients:
For the bread :
- 0,525 kg flour 00
- 0,338 кг water
- 0,012 кг white sugar
- 0,012 kg salt
- 0,006 kg dry yeast
- 0,1 kg olive oil
- 0,03 kg olives with out pit
- 0,05 kg cherry tomatoes
For the topping :
- 0,1 kg olive oil
- 0,02 kg Balsamic vinegar
- 0,005 kg Rosemary
Procedure :
1. In a bowl of a mixer put the water, yeast, sugar and 0.05 kg of olive oil and mix until everything is well mixed.
2. Add the flour and start mixing until everything is well mixed and you get a sticky dough.
3. Add the salt and continue to mix for 2 minutes.
4.On the worktop or table pour the remaining 0.05 kg of olive oil and then the dough on olive oil, making several folds until you get a square shape with a smooth surface.
5. Prepare a gastro norm, 1/2 32 by 26 cm with baking paper and place our dough inside with the smooth surface facing up.
6. Cover with cling film and refrigerate for 24 hours for slow fermentation.
7. Bring the focaccia to room temperature, distribute it over the entire surface of the gastro norm with your fingertips, then place the cherry tomatoes and olives, pressing them lightly into the dough
8. Cover with cling film and leave to rise to double size.
9. Preheat the oven to 190 degrees with a fan, place the bread carefully and bake for 30 minutes.
10. Take it out of the oven, pull it out of the gastro norm on the grill with the help of baking paper and leave it to cool for 30 minutes.
For the topping :
11. Cut the fresh rosemary leaves very finely and mix with the other ingredients.
